Ingredients

  • 1/3 Cup of Neutral Oil
  • 2 Star Anise
  • 1 Cinnamon Stick
  • 2 cloves of garlic – finly diced
  • 1 tablespoon of chilli flakes
  • 1 tablespoon fried shallots
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar

Directions

  • Heat the oil, garlic, star anise, cinnamon and bay leaves in a small sauce pan over a medium heat.
  • Once the oil starts to bubble slowly turn the heat down to low making sure the oil does not get too hot, you will burn the spices. Keep the oil temperature under 300f
  • Leave for 5-10 mins
  • Meanwhile add the chilli flakes, shallots, soy and sugar to a small dish or the storage jar.
  • Pour the hot oil over the chilli flakes and allow to cool.
  • Once cooled remove the cinnamon and star anise.
  • Store in the fridge, it should keep for up to 6 months.
