This is my attempt at a no-bake cheesecake without a crust, instead I am going to roll cut squares of the cheesecake in powdered biscuits. This is how I had it once at a restaurant and it was fantastic. I will be serving it with berry coulis.
INGREDIENTS
- 1 packet of shortbread biscuits
- 1 tsp mixed spice
- 2 tsp gelatine
- 2 tbsp water
- 2 x 250 g cream cheese
- 400 g sweetened condensed milk
- 300 ml cream
- 150 g white chocolate
DIRECTIONS
- Melt chocolate in double boiler or microwave.
- Sprinkle gelatine over the water in small heatproof jug, stand in small saucepan of simmering water and stir until gelatine dissolves. Cool for a few minutes. Don’t let it set otherwise you need to melt it again. It will go lumpy otherwise (I learnt this the hard way).
- Beat cheese and condensed milk with electric mixer until smooth.
- Beat cream in small bowl with electric mixer until soft peaks form.
- Stir warm gelatine mixture into cheese mixture.
- Fold in cream and melted chocolate.
- Pour into tin and refrigerate for 4-5 hours to set.
- Blitz the biscuits into a very fine crumb and mix in the mixed spice (save some shortbreads for plating on the side).
- Once the filling has chilled, remove and slice it into squares or whatever shape you want.
- Roll the squares in the crumb mixture and plate with berry coulis, Saved shortbreads and some additional crumb.
3 tsp of mixed spice to 1 packet of 200 gram shortbreads works well. My spices may be a little old though.
