INGREDIENTS
- 50 g butter, melted
- 2 eggs
- 1 cup unsweetened almond milk
- 1½ cups oat flour OR 1 cup oat flour and 1/2 cup of vanilla protein powder
- 1.5 teaspoons baking soda
- 3 tablespoons stevia sugar replacement (any stevia based product that is 1:1 with sugar)
- OPTIONAL: 2 tsp Mix Spice
DIRECTIONS
1. Measure ingredients into a large bowl, in the order above.
2. Beat with a fork just until no longer lumpy. Do not overbeat or pancakes will be tough.
3. Heat a frypan, then spray or butter it lightly. Pour approximately 1/4 cup batter into the
pan.
4. Turn pancake when bubbles break in the middle of the pancake.
5. Serve with butter and fresh berries
