A great little snack for when friends come over, goes great with cheese and crackers… oh and beer of course.

INGREDIENTS

  • 160 grams drained assorted jar olives.
  • 2 garlic cloves, thinly sliced
  • zest of one lemon
  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon cracked black pepper
  • 1 tsp whole coriander seeds
DIRECTIONS
  1. Combine all ingredients in a bowl.
  2. Cover and refrigerate for at least 4 hours and up to 48 hours.
  3. Allow to come to room temperature before serving.
