Serves 6-8
INGREDIENTS
- 1 kg Beef chuck
- 2 x 400ml can coconut milk or cream
- 1 tin maesri masaman curry paste
- 2 tbsp tamarind juice or 1 tablespoon of lime juice
- 2 tbsp fish sauce
- 2 tbsp palm sugar or brown sugar
- 2 tbsp cooking oil
- 1 tsp turmeric powder
- 1 large brown onion
- 1 cup unsalted cashews or peanuts
- 2 medium-sized potatoes
- 1/2 tbsp deep fried onion
- chilli flakes to serve (optional)
DIRECTIONS
- Trim the beef of excess fat and cut into 3cm cubes.
- Peel and quarter potatoes and boil until soft (adding the turmeric powder into the water for colour).
- Dice the onion into medium-sized pieces.
- Into a medium-sized pot add oil, onion, beef and lightly cook / brown.
- Add coconut milk and curry paste.
- Slowly cook for 2-3 hours. you may need to add water if things evaporate too much.
- Once beef is tender add juice, fish sauce and sugar.
- Add potatoes when ready to serve.
- Top with cashew nuts, deep fried onion and chilli flakes if wanted.
