- 200 grams rice noodles
- 2 cloves garlic – finely diced
- 1 onion finely sliced
- 200 grams chicken breast – finely sliced
- 150 grams green prawns
- 1 egg
- 2 tbsp vegetable or peanut oil
TO SERVE ON TOP
- crushed peanuts
- wedge of lime or lemon
- chilli flakes
- fried shallots
- bean sprouts
SAUCE
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 3 tbsp tamarind concentrate
- 3 tbsp palm sugar
DIRECTIONS
- Soak the noodles as per pack directions.
- Put the sauce ingredients into the wok and cook until everything has combined and melted (3-5 mins). Set Aside
- Add oil to the wok and fry the onion and chicken until chicken is cooked through.
- Add prawns, garlic and cook though.
- Push protein to the side and add the egg slightly beaten beforehand.
- Add the soaked and drained noodles and fry with the sauce (judge how much is needed, may not need it all) until warmed though. Around 5 mins.
- Add chilli flakes optionally.
- Serve topped with crushed peanuts, bean sprouts and fried shallots. Wedge of lime or lemon to serve.
