INGREDIENTS
- 220 grams SR flour
- 1/2 teaspoon bicarbonate of soda
- 1 cup shredded coconut
- 1/2 cup firmly packed brown sugar
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/3 cup sultanas
- 1/3 cup chopped dried apricots
- 3/4 cup milk
- 90 g butter, melted
- 2 eggs, lightly beaten
DIRECTIONS
- Preheat oven to 200°C and spray 12 hole muffin tin.
- Sift flour & soda into bowl. Stir in cocnut, seeds and dried fruit.
- Make a well in the centre. Add melted butter, milk and eggs.
- Mix with fork until well combined. Spoon into muffin tray.
- Bake 20 minutes. Stand in tin for 5-10 minutes before turning out onto a cooling rack.
