Ingredients

  • 2 egg yolks
  • 1 tablespoon lemon juice
  • 1½ tablespoons water
  • 150 g salt reduced butter, melted
  • Salt and pepper, to taste

 

Method

  1. Place eggs, lemon juice and water in a medium-large microwave safe bowl and whisk.
  2. Cook at 50% for 15 seconds. Remove from microwave and whisk well.
  3. Repeat this process 3 more times. The mixture will be quite thick at this stage.
  4. Slowly drizzle in the melted butter whisking constantly for 1-2 minutes.
  5. Season with salt and pepper and serve.
