- 1/2 tsp ground mace
- 7 eschallots
- 7 garlic cloves
- 3 lemon grass stalks, bruised
- 7 coriander roots
- 8cm piece galangal sliced
- 4 dried large chillis
- 1/4 tsp chilli powder
- 3 tbsp grapeseed oil
CURRY INGREDIENTS
- 400 grams diced shin or chunk beef
- 4 -5 potatos, washed with skin on
- handful peanuts
- palm sugar
- fish sauce
- tamarind paste
- 1 -2 cans coconut milk
