SPICE MIX
- 4 tsp Italian mixed herbs – Hoyt’s Brand – RED PACKET
- 1 tsp celery salt
- 1 tsp allspice
- 1 tsp black pepper
- 2 tbsp paprika
- 1 tbsp onion powder
- 3 tsp chilli powder (Adjust due to guest, 1 tsp if for kids/sooks)
- 2 tsp garlic powder
Mixing For Chicken (For around 2kgs Chicken)
- ½ cup flour
- ½ cup fake breadcrumbs i.e. from a packet at the shop, not homemade as it needs to be fine
- 2 tbsp of the above spice mix
- 2 tbsp brown sugar
- 2 tsp salt
Alternative Mix (For around 2kgs Chicken) – Good For BBQ Cooking.
- 2 tbsp of the above mix
- 2 tbsp brown sugar
- 2 tsp salt
- 2 tbsp baking powder
DIRECTIONS (Chicken Wings in The Oven)
- Make the mix above and place within a re-sealable bag.
- Place chicken pieces into and shake to coat.
- Place chicken pieces on a wire rack above a baking tray and spray with cooking oil.
- Bake for 40 – 45 mins in a 180c oven, turn the tray around half way.
OR - Bake for 30 mins at 120c then increase to 220c for another 40 mins, turn the tray around half way.
DIRECTIONS (Wings with Pre – Cook)
- Make the mix above and place within a re-sealable bag.
- Pressure cook on high wings for 5 mins on a rack so the fat drips into the water, 1/2 cup in the bottom for the steam.
- Allow to cool.
- Coat wings in mixture and bake for 20 mins on 230c to crisp up.
- Serve with ranch or chilli sauces.
