INGREDIENTS

2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon white pepper
1/4 teaspoon chilli
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 onion, quartered
1 whole chicken

To make it a wet marinade add 3 tablespoons of lemon juice and 3 tablespoons of light olive oil.

 

DIRECTIONS

1. In a small bowl mix together the spice mix.

2. Wash and dry the chicken inside and out, rub the spice mix over the chicken, inside and out. Put the onion in the cavity. You can wrap in cling film here and let it marinate for 4-6 hours if you wish.

3. Roast as normal. On the spit is best.

4. Rest the chicken in tin-foil for an hour or so increases the tenderness.
