  1. The whole process should take under 4 hours. 3 hours – 15 mins for ribs (1.5 unwrapped, 1.5 wrapped, 15 glazed), 1 hour for sausages and 1-1.5 hours for wings.
  2. Setup smoker with 1 pecan chunk, 275f.
  3. Rub Ribs and place in the smoker for 1 hour.
  4. Prep Wings and sausages.
  5. Take ribs out at the 1 hour mark, add a second piece of pecan, once blue smoke has formed, add the ribs, wings and sausages into the smoker (wings on top rack, then sausages then ribs.
  6. 30 mins later take the ribs out, wrap with butter, honey and BBQ sauce, back into the smoker for 1.5 hours.
  7. 30 mins later, check sausages and wings, sausages should be done, wings may need longer depending on tenderness.
  8. Ribs should be done by the 3 hour mark, at that point, unwrap, re-glaze with BBQ sauce and back into the smoker for around 15 minutes
  9. Fry sausages in a pan to crisp up
  10. Drown the wings in buffalo sauce, if they need more time under the grill, do so before saucing.
  11. Serve with fries, dipping sauces and more bbq sauce.
