Ingredients

  • 50 grams red curry paste
  • 500 grams of frozen mixed vegetables
  • 500 mls water
  • 1 onion diced
  • 1 can of coconut milk
  • 600 grams thinly diced chicken breast
  • 300 grams of finishing vegetables

Directions

  1. Place diced onion into the multicooker with some oil on the browning setting
  2. add the red curry paste and cookout a little
  3. add the water and vegetables
  4. Once it’s boiling close the lid and set the soup mode to 20 mins
  5. Once soup mode is complete blitz the vegetables until smooth
  6. add the coconut milk and simmer for a little bit
  7. add the diced chicken and finishing vegetables, simmer until cooked through.
