INGREDIENTS

  • 2 large eggs
  • 1/4 cup water
  • 2/3 cup Frank’s Red Hot Sauce
  • 1.5 cups self-rising flour
  • 2 tablespoons prepared spice mix
  • 2 tsp salt
  • 1 chicken, cut into pieces (or can be a stack of wings if you prefer)
  • Vegetable oil or peanut oil, for frying

 

DIRECTIONS

  1. Make my buffalo wing sauce as per this link.
  2. Mix up the spice mix as per this link.
  3. Prepare chicken by rinsing with cold water and patting dry. Set aside on a large plate, cutting board or pan.
  4. In a medium size bowl, beat eggs with water. Add hot sauce. In another bowl, combine the flour, spice mix, salt, and sugar. Dip chicken in egg mixture, then coat well in the flour mixture.
  5. Preheat your oven to a 180C. Prepare a baking sheet topped with a cooling rack. Have this handy to transfer the par cooked chicken into the oven to finish off.
  6. Heat the oil to 190 degrees C in a deep fryer. Do not fill the pot more than 1/2 full with oil.
  7. Fry the chicken in the oil until brown and crisp on the outside, approximately 5 mins, try and keep the temperature around 180 C. Transfer to the prepared baking sheet and finish off in the oven for 20-30 mins.
  8. Serve cooked chicken with my buffalo wing sauce and / or ranch dressing.
