Serves 6-8

INGREDIENTS

  • 1 kg Beef chuck
  • 2 x 400ml can coconut milk or cream
  • 1 tin maesri masaman curry paste
  • 2 tbsp tamarind juice or 1 tablespoon of lime juice
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar or brown sugar
  • 2 tbsp cooking oil
  • 1 tsp turmeric powder
  • 1 large brown onion
  • 1 cup unsalted cashews or peanuts
  • 2 medium-sized potatoes
  • 1/2 tbsp deep fried onion
  • chilli flakes to serve (optional)

 

DIRECTIONS

  1. Trim the beef of excess fat and cut into 3cm cubes.
  2. Peel and quarter potatoes and boil until soft (adding the turmeric powder into the water for colour).
  3. Dice the onion into medium-sized pieces.
  4. Into a medium-sized pot add oil, onion, beef and lightly cook / brown.
  5. Add coconut milk and curry paste.
  6. Slowly cook for 2-3 hours. you may need to add water if things evaporate too much.
  7. Once beef is tender add juice, fish sauce and sugar.
  8. Add potatoes when ready to serve.
  9. Top with cashew nuts, deep fried onion and chilli flakes if wanted.
