  • 200 grams rice noodles
  • 2 cloves garlic – finely diced
  • 1 onion finely sliced
  • 200 grams chicken breast – finely sliced
  • 150 grams green prawns
  • 1 egg
  • 2 tbsp vegetable or peanut oil

 

TO SERVE ON TOP

  • crushed peanuts
  • wedge of lime or lemon
  • chilli flakes
  • fried shallots
  • bean sprouts

 

SAUCE

  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 3 tbsp tamarind concentrate
  • 3 tbsp palm sugar

 

DIRECTIONS

  1. Soak the noodles as per pack directions.
  2. Put the sauce ingredients into the wok and cook until everything has combined and melted (3-5 mins). Set Aside
  3. Add oil to the wok and fry the onion and chicken until chicken is cooked through.
  4. Add prawns, garlic and cook though.
  5. Push protein to the side and add the egg slightly beaten beforehand.
  6. Add the soaked and drained noodles and fry with the sauce (judge how much is needed, may not need it all) until warmed though. Around 5 mins.
  7. Add chilli flakes optionally.
  8. Serve topped with crushed peanuts, bean sprouts and fried shallots. Wedge of lime or lemon to serve.
