Ingredients
- 2 egg yolks
- 1 tablespoon lemon juice
- 1½ tablespoons water
- 150 g salt reduced butter, melted
- Salt and pepper, to taste
Method
- Place eggs, lemon juice and water in a medium-large microwave safe bowl and whisk.
- Cook at 50% for 15 seconds. Remove from microwave and whisk well.
- Repeat this process 3 more times. The mixture will be quite thick at this stage.
- Slowly drizzle in the melted butter whisking constantly for 1-2 minutes.
- Season with salt and pepper and serve.
