PASTE INGREDIENTS

  • 1 tsp cumin seeds
  • 1tbsp coriander seeds
  • 1 tsp ground nutmeg’
  • 1 stick of cassium bark
  • 8 thai cardamon pods (4 whole and 4 seeds)
  • 4 cloves
  • 1/2 tsp ground mace
  • 7 eschallots
  • 7 garlic cloves
  • 3 lemon grass stalks, bruised
  • 7 coriander roots
  • 8cm piece galangal sliced
  • 4 dried large chillis
  • 1/4 tsp chilli powder
  • 3 tbsp grapeseed oil

 

CURRY INGREDIENTS

  • 400 grams diced shin or chunk beef
  • 4 -5 potatos, washed with skin on
  • handful peanuts
  • palm sugar
  • fish sauce
  • tamarind paste
  • 1 -2 cans coconut milk
