A general all rounder spice paste mix, serves 4 meals.

 

INGREDIENTS

  • 4 tsp ground coriander
  • 4tsp ground cumin
  • 1tsp ground paprika
  • 1 tsp ground tumeric
  • 2 tsp garam masala
  • 1 tsp ground pepper
  • 1/2 tsp salt
  • 1 tsp freshly grated ginger
  • 2 tsp crushed garlic
  • 1/2 tsp dried chilli flakes / powder (To Taste)
  • 1 onion
  • 2 tbsp white vinegar
  • 1 tbsp oil to bring it together as a paste. Could use water instead.

DIRECTIONS

Blend the onion, garlic and ginger to a paste, mix in the rest of the ingredients.
Fry the mix in oil for a bit to soften the onions and toast the spices.
Cook with all ingredients for 1 hour or more. Meat type dependent.

 

TO SERVE (Rough)

– 500-750 Grams Meat
– 1 Tin of tomatoes
– Diced Onions, Carrots, Capsicum etc
– Either coconut milk, cream, yogurt
– Stock or just water.
