INGREDIENTS

Filling
6 large Granny Smith apples
2 tablespoons white sugar
2 teaspoons cinnamon

Crust
115 g butter
2 tablespoons white sugar
1 egg
2 cups plain flour
1 teaspoon baking powder
¼ cup custard powder

Crumble
¾ cup white sugar
¾ cup butter
1¼ cup plain flour
⅓ cup shredded coconut
⅓ cup rolled oats

 

DIRECTIONS

  1. Preheat the oven to 190°C.
  2. Filling: Boil the apples with enough water to cover. Reduce heat to low and simmer for 15 minutes.
  3. Drain the apples and allow to cool.
  4. Pour over sugar sprinkle the cinnamon powder onto the apples.
  5. Crust: In a bowl, whip together the butter and white sugar until fluffy and mix in the egg.
  6. In a separate bowl, mix the flour, baking powder and custard powder together. Mix into the butter mixture.
  7. Press it into the bottom and up the sides of a 22 cm spring form pan.
  8. Pour the apples into the crust.
  9. Crumble: Mix all the crumble ingredients together using your hands, until it resembles crumbs.
  10. Bake for 45 minutes to an hour or until golden brown.
