Filling
6 large Granny Smith apples
2 tablespoons white sugar
2 teaspoons cinnamon
Crust
115 g butter
2 tablespoons white sugar
1 egg
2 cups plain flour
1 teaspoon baking powder
¼ cup custard powder
Crumble
¾ cup white sugar
¾ cup butter
1¼ cup plain flour
⅓ cup shredded coconut
⅓ cup rolled oats
DIRECTIONS
- Preheat the oven to 190°C.
- Filling: Boil the apples with enough water to cover. Reduce heat to low and simmer for 15 minutes.
- Drain the apples and allow to cool.
- Pour over sugar sprinkle the cinnamon powder onto the apples.
- Crust: In a bowl, whip together the butter and white sugar until fluffy and mix in the egg.
- In a separate bowl, mix the flour, baking powder and custard powder together. Mix into the butter mixture.
- Press it into the bottom and up the sides of a 22 cm spring form pan.
- Pour the apples into the crust.
- Crumble: Mix all the crumble ingredients together using your hands, until it resembles crumbs.
- Bake for 45 minutes to an hour or until golden brown.
