INGREDIENTS

  • 4 Eggs
  • 1/2 cup self raising flour
  • 1.5 cup milk
  • 1/2 cup grated tasty cheese
  • 1 small onion finely diced
  • 1 tbsp margarine / butter – melted
  • herbs to flavour (optional)
  • 4-8 slices of eye bacon or chorizo, chicken etc
  • 1 cup of any filling you choose. i.e.  corn, peas, tomato etc.
  • Salt & Pepper
  • chilli flakes (optional)
  • OPTIONAL: Cheap sliced bread (For the base).

 

DIRECTIONS

  1. Pre-heat oven to 180c
  2. Put all ingredients into a container and stir or shake to combine.
  3. If using the bread as a base, cut of the crusts, roll flat with rolling pin and line each muffin tin with the bread. Spray well first so it doesn’t stick.
  4. Fill into 12 muffin holes and bake for 20 mins, turning the tray at 15 min mark.
  5. Turn oven off and let them rest for a further 5 mins in the tin and then turn out. You may need another 5 mins in the oven.
