INGREDIENTS
- 4 Eggs
- 1/2 cup self raising flour
- 1.5 cup milk
- 1/2 cup grated tasty cheese
- 1 small onion finely diced
- 1 tbsp margarine / butter – melted
- herbs to flavour (optional)
- 4-8 slices of eye bacon or chorizo, chicken etc
- 1 cup of any filling you choose. i.e. corn, peas, tomato etc.
- Salt & Pepper
- chilli flakes (optional)
- OPTIONAL: Cheap sliced bread (For the base).
DIRECTIONS
- Pre-heat oven to 180c
- Put all ingredients into a container and stir or shake to combine.
- If using the bread as a base, cut of the crusts, roll flat with rolling pin and line each muffin tin with the bread. Spray well first so it doesn’t stick.
- Fill into 12 muffin holes and bake for 20 mins, turning the tray at 15 min mark.
- Turn oven off and let them rest for a further 5 mins in the tin and then turn out. You may need another 5 mins in the oven.
