INGREDIENTS

  • 2 teaspoons ready prepared Italian herb seasoning
  • 1/4 teaspoon salt
  • 1/2 teaspoon dry mustard powder
  • 1 teaspoon garlic salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 x 1.7Kg chicken
  • 6 tablespoons of lemon juice (or 2 lemons – squeezed)
  • 2 tablespoons olive oil

 

DIRECTIONS

  1. Combine the seasoning, salt, mustard powder, garlic salt and black pepper together in a small bowl Set aside. Rinse the chicken thoroughly, and remove the giblets.
  2. Mix the lemon juice into a small bowl or cup and mix in the olive oil and the spice mixture. Coat the chicken inside and out with the mixture, and drizzle any remaining mixture over the chicken.
  3. Cook as normal
