A great little snack for when friends come over, goes great with cheese and crackers… oh and beer of course.
INGREDIENTS
- 160 grams drained assorted jar olives.
- 2 garlic cloves, thinly sliced
- zest of one lemon
- 2 tablespoons lemon juice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon red pepper flakes
- 1/2 teaspoon dried thyme
- 1/2 teaspoon cracked black pepper
- 1 tsp whole coriander seeds
DIRECTIONS
- Combine all ingredients in a bowl.
- Cover and refrigerate for at least 4 hours and up to 48 hours.
- Allow to come to room temperature before serving.
I quite often do not have the thyme so I leave it out. You could also vary this by using orange juice and zest, or even lime.
