Millefeuilles is basically a vanilla slice, quite easy to make and really delicious. The poached strawberries are optional, you could use cherries or other types of berries in it’s place.

 

INGREDIENTS

  • 1 sheet of puff pastry
  • 1 quantity of basic custard (3 tbsp corn flour version)
  • icing sugar
  • Poached Strawberries (Below)

INGREDIENTS (Poached Strawberries)

  • 15 – 20 strawberries– whole
  • 2 tbsp white sugar
  • 350ml Berry juice
  • 1 cinnamon stick
  • 5 black peppercorns
  • 1 teaspoon vanilla essence extract
  • 1 star anise
  • 4 cardamom pods
  • 1 tsp balsamic vinegar
  • 1 tsp diced mint leaves

DIRECTIONS (Poached Strawberries)

  1. Place the sugar in a small pot and heat to produce a light caramel.
  2. Place all the spices into the pot and roast, until they become fragrant.
  3. Add the berry juice and heat but do not let it boil (about 70C ). ..
  4. Cook the berries gently in the liquid for 3 minutes. Set aside.
  5. Keep the cherries in their cooking liquid until ready to be served.

DIRECTIONS (Pastry)

  1. On a baking tray lay down baking paper, then place the sheet of puff pastry on top and cover pastry with another sheet of baking  paper and another baking tray (this is to prevent the puff pastry rising too much).
  2. Place into the oven at 180°C  for 15-20 minutes, or until the pastry is golden. Remove from the oven and cool.
  3. Cut the pastry into 3cm by 8cm pieces, you will need three per serve.

PLATING

  1. Place three berries on the plate in a line standing up, drizzle with some of the berry sauce.
  2. Lay the puff pastry on the plate. Pipe or spoon the vanilla custard in-between the three layers of pastry. Dust the last layer of pastry with icing sugar.
