Everyone loves fries so I wanted to try and replicate the mass produced common fries you find at the fast food joints. The main points are, double cooking and the right potato variety. I know from my roast potatoes the best that I can get locally is royal blue potatoes. I like to keep the skin on as it gives a better flavour.

Ingredients
– Potatoes
– Cooking Oil
– Salt
-2 tbsp white vinegar

Step 1: Preparing
– Cut your fries into the desired thickness (I made these around 1/4 – 1/2 inch)
– Place fries into a post of cold water with the vinegar. Bring to the boil for around 10 mins.
– Drain the fries and try and dry them out as much as possible. Putting them in the fridge uncovered will help.

Step 2: Frying
– Get your oil nice and hot, fry until brown and crisp
– Drain and add salt.
– Enjoy.
